Chocolate Quinoa Cupcakes with Chocolate Avocado Frosting

This is a recipe for a chocolate quinoa cupcakes with a chocolate avocado frosting.
You won’t be able to tell this cake/frosting are made with either ingredient mentioned above. This is one of our go to favorites when we have a chocolate craving.

Chocolate Quinoa Cupcakes
2 Cups COOKED Quinoa
3/4 Cup melted Butter
4 Eggs
1/3 Cup Milk
1 1/4 Cup Honey (can use sugar or maple syrup)
1 1/2 Tsp Vanilla extract
1 Cup Raw Cacao powder(can use cocoa powder)
1 1/2 Tsp baking powder
1 Tsp Baking Soda
1/2 Tsp Salt

1. In a blender or food processor blend quinoa, butter, eggs, milk, honey and vanilla extract
2. Combine cacao, baking powder, baking soda, and salt together.
3. Stir together wet mixture and dry mixture
4. Pour into cupcake pan, fill to line as these will not rise too much
5. Bake at 350 degrees for 25 minutes

Chocolate Avocado Frosting
2 RIPE Avocados
1/2 Cup Raw Cacao powder (can use cocoa powder)
1/2 Cup Honey (or maple syrup)
2 Tbs vanilla extract

Blend ingredients together until smooth


When your cupcakes cool go ahead and frost them. Then you’re ready to enjoy!
